Chicken curry is a combination of chicken and an onion, slice of tomato, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices.
Preparation time: 45 minutes
Cooking time: 20-25 minutes
Chicken : 800 gm
Ghee : 90 gm/ 7 Tbs
Whole Red Chilli : 8 pcs
Fenugreek (Kasoori Methi) : 5 gm/ 1 tsp
Garlic Paste : 20 gm/ 3½ tsp
Salt to taste
Coriander Seeds : 6 gm/ 1 Tbs
Tomatoes : 1 kg
Green Chillies : 4 pcs
Ginger : 40 gm
Green Coriander as to required
Garam Masala : 10 gm
Step:1 Clean and remove the whole chicken skin and cut each into medium pieces.
Step:2 Wash all the vegetables, chop tomatoes. Remove stems, slit and chop green chillies. Scrape and chop ginger. End of Clean coriander and chop.
Step:3 Pound red chillies and coriander seeds with a pestle.
method:1 Heat ghee in a kadhai, add garlic paste and saute over medium heat until light brown.
method:2 Add the pounded spices, stir for 30 seconds, add tomatoes, bring to a boil, after add green chillies, then three-fourths of the ginger and one third of the chopped coriander, reduce the heat and simmer for 2-3 minutes.
method:3 Then add chicken, bring to a boil, simmer, until the fat leaves the masala.the gravy becomes thick.
method:4 Sometime after the gravy becomes thick then sprinkle garam masala and fenugreek, adjust the seasoning and stir for sometime (approx 2min).
Remove chicken curry to a dish, garnish with the remaining ginger and coriander. serve with bread and other your choice of food.
