Pav bhaji is a popular indian fast food dish and It made famous on the side streets of bombay. The combination of a spicy curry of mixed vegetables cooked in a special blend of spices and loads of butter is called bhaji.
Preparation time: 35 minutes
Cooking time: 10-12 minutes
Potatoes : 650 gm
Ghee : 100 gm/ ½ cup
Tomatoes : 250 gm/ 1 cup
Whole Red Chillies : 5 pcs
Ginger : 15gm
Butter : 75 gm/ 5 Tbs
Garlic paste : 5 gm/ 1 tsp
Ginger paste : 5 gm/ 1 tsp
Salt to taste
Green Chillies : 4 pcs
Garam Masala : 10gm/ 2 tsp
Coriander : 20 gm/ ⅓ cup
Lemon Juice : 30 ml/ 2 Tbs
Buns as to required
Step:1 Boil the potatoes, Some time later peel and cut in dice shape.
Step:2 Remove stems, wash, slit and chop green chillies. Scrape, wash and chop ginger. Wash and chop tomatoes. clean, wash and chop coriander.
Step:3 The red chillies, Pound with a pestle.
Step:4 The buns, Cut into halves, horizontally.
method:1 Heat ghee on a large tawa, add green chillies, ginger and tomatoes, saute over medium heat for 2-3 minutes.
method:2 In tawa,add red chillies and potatoes, reduce to low heat and with a metal spatula simultaneously mash and stir for 5 minutes.
method:3 Whilst stirring keep sprinkling the ginger and garlic paste, dissolved in 90ml/6 Tbs of water. Adjust the seasoning, in medium beat.
method:4 Add two-thirds of the butter and stir constantly until the butter is incorporated. Sprinkle garam masala, coriander and lemon juice, stir.
finale : Approximately 2-3 minutes after, remove bhaji in a large bowl.
- Apply the remaining butter on the bun-halves, place them on the tawa and grill until golden brown.
- Remove the bhaji to a dish and serve with the buns and onion.
