Mutton Rara is also known as Rara Gosht. It is popular in North Indian states.

Serves: 4
Preparation time: 2 hours
Cooking time: 1:45 hours


Mutton : 1.2 kg
Ghee : 150 gm
Yoghurt : 150 gm
Onions : 250 gm
Tomatoes : 400 gm
Garlic : 20 gm/ 2 Tbs
Ginger : 20 gm/ 2 Tbs
Coriander Powder : 25 gm/ 5 tsp
Cumin powder : 10 gm/ 2 tsp
Red Chilli Powder : 5 gm/ 1 tsp
Turmeric : 3 gm/ ½ tsp
Black Cardamom : 3 pcs
Green Cardamom : 8 pcs
Bay Leaves : 2 pcs
Whole red chillies : 4 pcs
Garlic paste : 50 gm/ 3 Tbs
Ginger paste : 50 gm/ 3 Tbs


Step:1 Clean and Cut breast into medium.

Step:2 Whisk yoghurt in a large bowl, add salt and leave the mutton pieces. Mix well and marinade for 90 minutes.

Step:3 Wash and chop, onions and tomatoes. Scrape, wash and roughly chop ginger. Peel and roughly chop garlic.


method:1 Heat ghee in a handi, add black cardamom ,green cardamom and bay leaves, saute over medium heat for 8 seconds. sometime after add onions and saute until light brown.

method:2 Add the garlic and ginger pastes, coriander,
red chilli powder and turmeric, stir until the moisture has evaporated.

method:3 Then add marinade mutton, bring to a boil, reduce to low heat. cover and simmer until tender. (Keep adding 30 ml/ 2 Tbs of water to ensure that the mutton does not stick.)

method:4 Now add tomatoes, chopped ginger and chopped garlic, stir and roast until mutton is napped in the masala. Add cumin and whole red chillies, stir for 2 minute. then adjust the seasoning.

finale: Ready your rahra meat, Remove to a flat dish and serve with Tandoori Roti.
